Pizza and boozy pancakes Italian style

Happy pancake day!

There are so many different ways to enjoy Pancake Tuesday, and this year I have tried to make it a  little different, with an Italian twist; Pizza pancakes, followed by a boozy version of the traditional Nutella pancakes.

Here is what you need to make 12 pancakes:

  • 100g flour
  • 2 eggs
  • pinch of salt
  • 150ml milk
  • 80ml water
  • Olive oil
  • 1TBS butter

For the fillings:

  • Tomato sauce (ready-made)
  • Grated mature cheddar
  • Oregano
  • Nutella
  • Amaretto di Saronno
  • Shaved almonds
  • Lemon juice
  • Blueberries
  • Caster sugar

Sift flour and salt into a bowl, add two eggs, milk, water a few drops of olive oil. Whisk until  the batter is smooth and creamy.  Melt the butter in a non stick pan.

When the pan is hot, turn the heat down slightly to medium. Pour the batter in, giving it a round shape. After a minute or so, flip the pancake over and cook for another minute or so. The base of your pancake is ready.

PIZZA PANCAKE

Top the pancake with tomato sauce, grated mature cheddar and oregano. Fold in half. When the cheese starts melting remove it from the pan and serve immediately.

AMARETTO & NUTELLA PANCAKE  

Spread Nutella on your pancake, sprinkle with Amaretto, fold in half and serve with shaved almonds.

Guilt-free Papaya Mousse

Recently – when not eating out ;) – I have been playing around with a few healthy recipes. This is a guilt-free dessert I have made an evening last week; Papaya mousse.

A delicious and virtually fat-free pudding, incredibly easy to make!

What you need to make 2:

  • 250g fat-free Greek yogurt
  • 1 Papaya
  • 3 tablespoons of brown sugar

Blend papaya flesh and brown sugar until smooth. Pour 4 table spoons in a glass to use later.

In a bowl, smooth out the Greek yogurt by stirring it with a spoon. Incorporate the papaya sauce gently, one spoonful at a time.

YOGURT

Carefully pour the yogurt mixture into serving glasses, top with the remaining papaya sauce.  Serve it chilled.

There you have it! Your fat-free indulgent tropical dessert!

Naughty Nutella and M&Ms truffles

Warning! These little babies are highly addictive :)

Making indulgent and naughty truffles doesn’t have to be a serious affair. Here is a super easy short-cut with my favourite chocolate and nut spread: NUTELLA.

And yes, you can still show off your chocolatier skills with the girls, handing out this decadent treat after dinner, or surprising the boy with a romantic night in.  It’s our little secret, just between you and me, I won’t tell anyone ;) .

This is what you need:

5 tablespoons of Nutella

100g of chocolate (dark chocolate works better, but it’s your choice)

1 pack of M&Ms

A sprinkle of rock salt

Let’s get our hands dirty:

Put  5 TBS of Nutella in a bowl, flatten the surface and place in the fridge for a couple of hours.

Once the Nutella has refrigerated, remove it from the fridge and use a tea-spoon to dig into the chocolate, add a M&M in the middle, then roll into a ball. You should have enough mixture to shape about 12 truffles.

Place them on a tray covered in kitchen foil. Put them into the freezer for 20 minutes.

Melt the chocolate, by placing a bowl on top of a saucepan of boiling water.

Remove the shaped truffles from the freezer and with either your fingers or a cocktail stick  dip each truffle into the melted chocolate, then place it back onto the kitchen foil.  Wait 5 minutes for the chocolate to dry, and sprinkle them with the rock salt.

Scrumptious bruschetta

It’s Monday… it’s freeeeezing and miserable.  I spent the morning running around, and I didn’t even time for a quick lunch. I am starving!  So here it is, my 3 minute snack idea; the scrumptious bruschetta.

It takes 3 minutes to make, it’s super healthy and cheers me up instantly!  You can even make smaller versions for when the girls come over for a drink, they’ll love it!

Here is what you need if you want to join me! (for 2 people)

* 2 slices of Rye Bread

* 10 cherry tomatoes

* 2 avocadoes

* 125g mozzarella (1 ball), try to get hold of Buffalo Mozzarella if you can -  it makes an incredible difference, it’s creamier and tastier than normal mozzarella.

* A handful of toasted pine-nuts

* Extra virgin olive Oil

* Salt

* Pepper

* Balsamic Glaze

Put your Rye bread slices in the toaster. Chop the cherry tomatoes;  combine with the sliced avocadoes in a bowl. Season with olive oil, salt and pepper and give it a quick stir.  Once the bread is ready, top it with the tomato and avocado mixture. Rip the mozzarella into small pieces and add it on top of your bruschettas. Sprinkle with pine-nuts. Drizzle with the balsamic glaze.   Bliss!
